Description
This Tuscan White Bean Soup combines cannellini beans, fresh spinach, and an aromatic blend of herbs for a nourishing dish that’s perfect any time of the year.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cans (15 ounces each) cannellini beans, drained and rinsed
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes, with juice
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups fresh spinach leaves
- 1 tablespoon lemon juice
- Grated Parmesan cheese, for serving (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Stir in the minced garlic and sauté for another 1 minute until fragrant.
4. Add the diced carrots and celery to the pot and cook for an additional 5-7 minutes until the vegetables begin to soften.
5. Stir in the cannellini beans, vegetable broth, diced tomatoes with their juice, dried thyme, rosemary, and oregano.
6. Season with salt and pepper to taste. Bring the soup to a boil.
7. Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, allowing the flavors to meld together.
8. Stir in the fresh spinach leaves and lemon juice, cooking for an additional 5 minutes until the spinach is wilted.
9. Taste and adjust seasoning if needed.
10. Serve the soup hot, garnished with grated Parmesan cheese and fresh parsley if desired.
Notes
This soup can be made vegan by omitting the Parmesan cheese or using a vegan alternative.
For added richness, consider adding a splash of white wine while sautéing the vegetables.
Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
