Ingredients

  • 8 slices rye bread
  • 2 cups cooked chicken or beef, thinly sliced or shredded
  • 2 cups shredded Swiss cheese
  • 1.5 cups drained sauerkraut
  • 1 cup Thousand Island dressing
  • 2 tablespoons butter (for greasing)
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.

2. Arrange half of the rye bread at the bottom of the dish.

3. Layer half of the chicken or beef, followed by half of the Swiss cheese and sauerkraut. Drizzle with half of the dressing. Repeat layers with remaining ingredients.

4. Cover with foil and bake for 20-25 minutes. Remove foil and bake for another 10-15 minutes until golden brown.

5. Allow to rest for 5-10 minutes before serving.


Notes

You can swap chicken or beef with corned beef for a more traditional Reuben flavor.

Leftovers reheat well in the oven or air fryer.

Try adding pickles or a sprinkle of caraway seeds for extra zing.
