Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 2 cups fresh corn kernels (about 2 ears of corn)
- 2 medium zucchini, sliced
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
1. Prepare the zucchini by washing and slicing it into half-moons. If using fresh corn, remove the kernels from the cobs.
2. In a large skillet over medium heat, melt 2 tbsp of butter. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6–7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
4. Stir in the corn and zucchini slices, cooking for an additional 4–5 minutes until they are tender yet crisp.
5. Drizzle remaining melted butter over the mixture, add more seasoning if desired, and stir until everything is well coated. Garnish with chopped parsley before serving.
Notes
This one-pan dish is best served fresh, but leftovers can be refrigerated in an airtight container for up to 2 days.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth to retain moisture.
