This Vegan Gluten Free Bruschetta without Bread is a quick and healthy appetizer made with fresh tomatoes, basil, and garlic served over crunchy gluten free crackers.
Ingredients
- 2 cups mini heirloom tomatoes, diced
- 1–2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 4–5 fresh basil leaves, chopped
- 1/2 teaspoon sea salt, or to taste
- Gluten free Crunchmaster crackers, for serving
Instructions
1. Cut the tomatoes into small diced chunks and add them to a mixing bowl.
2. Stir in minced garlic, olive oil, balsamic vinegar, chopped basil, and sea salt until well combined.
3. Arrange gluten free crackers on a serving tray.
4. Top each cracker with a spoonful of the tomato bruschetta mixture.
5. Serve immediately and enjoy.
Notes
For best flavor, use ripe, in-season tomatoes.
Serve immediately after assembling to keep crackers crisp.
The tomato mixture can be prepared a few hours in advance and stored in the refrigerator until ready to serve.
You can substitute any sturdy gluten free cracker of choice.
