Description
A refreshing Mediterranean-inspired salad featuring tender chicken, crisp romaine, fresh vegetables, and a creamy homemade tzatziki sauce with garlic, cucumber, and dill.
Ingredients
- Plain Greek yogurt – 1 cup plus 2 tbsp
- 1/2 cucumber, grated
- 2–3 garlic cloves, pressed
- 2 tbsp olive oil
- 2 tbsp fresh dill, chopped
- Salt and pepper, to taste
- 2 cups cooked chicken, chopped
- 2 cups romaine lettuce, chopped
- 1 cup grape tomatoes, halved
- 1/2 cup pepperoncini peppers, sliced
- 1/2 cup kalamata olives, sliced
- 1/4 cup red onion, chopped
- 1/2 cup feta cheese, crumbled
Instructions
1. In a bowl mix Greek yogurt, grated cucumber, pressed garlic, olive oil, and chopped dill. Season with salt and pepper to make the tzatziki sauce.
2. In a large bowl toss together the chopped romaine lettuce, grape tomatoes, pepperoncini peppers, kalamata olives, and red onion.
3. Add the chopped cooked chicken on top of the salad mixture.
4. Generously spoon the prepared tzatziki sauce over the salad.
5. Finish by sprinkling crumbled feta cheese over the top.
6. Serve immediately and enjoy.
Notes
Rotisserie chicken works great for a quick version of this recipe.
For extra flavor add chopped fresh parsley or mint.
Serve with warm pita bread or flatbread for a more filling meal.
Store extra tzatziki sauce in the refrigerator for up to 3 days.
