Ingredients
- 1 tablespoon olive oil
- 1.5 pounds boneless skinless chicken, pounded to even thickness

- 10 ounces penne pasta
- 1 cup sun-dried tomatoes, drained
- 3 tablespoons butter
- 2 cups chicken broth
- 2 teaspoons dried Italian seasoning
- 1 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1 cup heavy cream, room temperature
- 3 tablespoons flour
- 2 teaspoons minced garlic
- Fresh basil, torn (for garnish)
- Additional Parmesan cheese (optional, for serving)
Instructions
1. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
2. Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper.
3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until cooked through and no longer pink. Transfer to a plate and set aside.
4. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
5. Stir in the flour to form a paste, then gradually whisk in the chicken broth. Add heavy cream and Parmesan cheese, stirring until smooth.
6. Mix in the sun-dried tomatoes, paprika, and Italian seasoning. Let the sauce simmer for several minutes until thickened.
7. Return the cooked chicken and drained pasta to the skillet. Toss well to coat evenly in the creamy sauce.
8. Taste and adjust seasoning if needed. Garnish with torn fresh basil and additional Parmesan before serving.
Notes
For extra richness, use high-quality butter and freshly grated Parmesan cheese.
If the sauce becomes too thick, add a splash of chicken broth to loosen it.
