Description
Sweet Macaroni Salad – seriously THE BEST macaroni salad EVER!! I took this to a potluck and it was the first thing gone. Everyone asked for the recipe! Can make this ahead of time and refrigerate overnight.
Ingredients
- 1 (16-oz) box elbow macaroni
- 4 medium carrots, grated
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 2 cups mayonnaise
- 1 (14-oz) can sweetened condensed milk
- 1 cup cider vinegar
- ¼ cup sugar
- 1 tsp salt
- ½ tsp black pepper
Instructions
1. Cook macaroni according to package directions. Drain.
2. Combine cooked macaroni, carrots, bell pepper and onion in a large bowl.
3. Whisk together mayonnaise, sweetened condensed milk, cider vinegar, sugar, salt and pepper. Pour over macaroni mixture and stir well.
4. Cover and refrigerate overnight.
Notes
This salad tastes even better the next day, making it perfect for potlucks, BBQs, and meal prep. Feel free to add chopped celery, diced pickles, or hard-boiled eggs for variation.
