If you’re a fan of cheesecake, you’re going to love these simple Strawberry Cheesecake Bars! Made with a graham cracker crust, creamy filling, and a sweet strawberry compote, they’re like classic cheesecake but even easier to whip up.
Ingredients
- For the crust:
- 12 graham crackers
- 1/4 cup sugar
- 1/2 cup butter, melted
- For the cheesecake filling:
- 16 oz. plain cream cheese, room temperature
- 1/4 cup Greek yogurt
- 1 egg
- 3 tbsp sugar
- 1 1/2 tsp vanilla extract
- For the strawberry topping:
- 1 cup strawberries, chopped
- 1 tbsp sugar
- 1 tbsp lemon juice
Instructions
1. Preheat oven to 350°F and line an 8×8 baking dish with parchment paper; set aside.
2. Add graham crackers and sugar to a food processor and pulse for 20 seconds. Add the melted butter and pulse until combined.
3. Press the crust mixture into the prepared baking pan using your hands to form an even layer.
4. Add strawberries, sugar, and lemon juice to a small saucepan. Bring to a boil, then reduce heat and simmer for 5-10 minutes, breaking down the strawberries. Set aside to cool slightly.
5. In a large bowl, mix cream cheese, Greek yogurt, egg, sugar, and vanilla extract with a hand or stand mixer until smooth.
6. Scoop the cheesecake mixture onto the crust and smooth it out.
7. Dollop HALF of the strawberry compote over the cheesecake layer and swirl it gently with a spoon.
8. Bake for 30 minutes. Remove from oven and let cool for 15 minutes at room temperature.
9. Transfer to the refrigerator and chill for at least 1 hour until fully cooled.
10. Slice into bars and enjoy!
Notes
Use only half the strawberry compote when swirling into the cheesecake; reserve the rest to serve on top or alongside the bars.
Bars can be stored in an airtight container in the refrigerator for up to 4 days.
Make sure cream cheese is at room temperature for a smooth filling.
