Description
Soft and chewy, these strawberry cake mix cookies are made with just 3 ingredients and come together in 20 minutes. A fun, festive treat for Valentine’s Day or any sweet occasion!
Ingredients
15.25 ounce box strawberry cake mix
½ scant cup vegetable oil, or 7 TB melted butter
2 large eggs
White chocolate melting wafers (optional)
Heart sprinkles (optional)
Instructions
1. Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.
2. Combine the cake mix, oil, and eggs in a large bowl. Stir together until combined.
3. If possible, refrigerate the dough for 15-20 minutes to make it easier to work with.
4. Using a medium scoop or spoon, scoop the dough onto the prepared baking mat.
5. Bake for 9-11 minutes, or until the cookies are set but not browned.
6. Allow cookies to cool on the pan for a couple of minutes, then transfer to a cooling rack.
7. If desired, melt 1/2 cup white chocolate and dip half of each cookie into the chocolate. Lay on wax paper and add sprinkles.
8. Let set until the chocolate hardens.
Notes
For extra strawberry flavor, mix in 1/4 to 1/2 cup chopped freeze-dried strawberries.
You can also mix in 1/2 cup white chocolate chips for a tasty variation.
Roll dough balls in granulated sugar before baking for a sweet crunch.
Store cookies in an airtight container at room temperature for up to 1 week.
To freeze, cool completely and place in a freezer bag for up to 2 months.
