Description

These St. Patrick’s Day Sugar Cookies are decorated with green frosting, cheerful shamrocks, and gold sprinkles to add a little leprechaun magic to your celebration.


Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 1 cup sugar
  • 1 egg
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Powdered sugar or flour for rolling
  • Decorating:
  • 1 can green frosting
  • Green sanding sugar
  • Gold sprinkles

Instructions

1. Preheat the oven to 350°F (175°C). Prepare a baking sheet with parchment paper.

2. Whisk together the flour, baking powder, and salt. Set aside.

3. In a mixing bowl, blend the butter and sugar until creamy and light. Add the egg, almond extract, and vanilla extract. Mix well.

4. Slowly add dry ingredients and mix until combined. Dough may be slightly crumbly.

5. Turn out the dough onto a surface dusted with powdered sugar or flour. Press into a ball and roll out to ¼ inch thickness.

6. Use cookie cutters to cut out shapes. Carefully transfer the cookies to the baking sheet using a flat spatula.

7. Bake for 7 to 9 minutes. Do not let the cookies brown.

8. Allow cookies to cool for at least 20 minutes on the baking sheet before transferring to a cooling rack.

9. After cooling, decorate with green frosting, sanding sugar, and gold sprinkles as desired.

10. Allow icing to dry before storing cookies in an airtight container with parchment between layers.


Notes

For a quick royal icing hack, microwave canned frosting for 1 minute, stir well, and transfer to a piping bag. Let icing dry fully before stacking cookies. Store in an airtight container with parchment between layers.
