Ingredients
- 4 chicken breasts
- 2 lemons (juiced)
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 4 cloves garlic (minced)
- 1 cup chicken broth
- 1 cup rice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. In a bowl, mix together the juice of two lemons, olive oil, oregano, thyme, minced garlic, salt, and pepper.
2. Place the chicken breasts into the slow cooker, and pour the lemon herb mixture over the top.
3. Add the chicken broth and rice to the slow cooker, stirring gently to combine everything.
4. Cover and cook on low for 4–6 hours, or until the chicken is fully cooked and tender.
5. When ready to serve, fluff the rice with a fork and garnish with fresh parsley.
Notes
For extra flavor, sear the chicken before adding it to the slow cooker. You can also customize the herb blend with rosemary or basil depending on your preference.
