Ingredients
- 4 chicken thighs – bone-in, skin-on recommended for flavor
- 1 cup chicken broth – substitute with vegetable broth or water if needed
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil – for browning the chicken
Instructions
1. Season the chicken thighs with salt, pepper, paprika, and dried thyme, coating them evenly.
2. In a skillet, heat olive oil over medium heat and brown the chicken thighs for 3 to 4 minutes on each side.
3. Transfer the browned chicken thighs to the slow cooker.
4. Add sliced onions and minced garlic on top of the chicken.
5. Pour in the chicken broth.
6. Cover and slow cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender.
7. Check for doneness; the chicken should easily pull apart with a fork.
