Description

These Shamrock Sugar Cookies are soft, buttery, and topped with festive green icing—perfect for celebrating St. Patrick’s Day!


Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Green icing (store-bought or homemade)
  • Green sprinkles (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

4. Beat in the egg and vanilla extract until well combined.

5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

6. Roll out the dough on a floured surface to about ¼ inch thick. Use a shamrock cookie cutter to cut out shapes.

7. Place the cookies on the prepared baking sheets and bake for 8-10 minutes or until the edges are lightly golden.

8. Allow the cookies to cool completely before decorating with green icing and sprinkles.


Notes

To make your own green icing, mix powdered sugar, milk, vanilla extract, and green food coloring until desired consistency. Store cookies in an airtight container for up to 5 days.
