- 2 to 3 lbs chuck roast
- 2 tablespoons vegetable oil
- 2 carrots, sliced into thin rounds
- 2 stalks celery, thinly sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, crushed
- 1 tablespoon dried parsley
- 1 teaspoon dried oregano
- 1/4 teaspoon ground thyme
- 6 cups beef broth (low sodium)
- 1 can diced tomatoes
- 1 bay leaf
- 2/3 cup medium barley
- 1 can corn, drained
Instructions
1. Heat oil in a large pot. Sear beef until golden; set aside.
2. Cook carrots, celery, and onion for 4-5 minutes.
3. Add garlic, parsley, oregano, and thyme; stir for 1 minute.
4. Pour in broth, tomatoes, bay leaf, and beef.
5. Simmer for 1.5 hours until the beef is tender.
6. Add barley and corn. Cover; cook for 30 minutes.
7. Simmer uncovered for another 15 minutes.
8. Remove beef; trim fat. Cut into pieces.
9. Add beef back to barley soup.
10. Serve hot with bread or preferred sides.
