Description
Crispy parmesan-crusted chicken baked on a sheet pan with seasonal vegetables for a delicious, easy, and complete weeknight dinner that’s ready in under an hour.
Ingredients
- 1 1/2 lb chicken breast (about 3–4 pieces) approx. 1 inch thick
- 2 T olive oil
- 2 garlic cloves, minced
- 1/3 c grated parmesan
- 1/3 c breadcrumbs (Italian or plain)
- 1/2 tsp cracked pepper
- 3/4 tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 2 T olive oil
- 2 T grated parmesan
- salt and pepper to taste
- 1 lb fresh green beans, ends trimmed
- 1 T olive oil
- 1 garlic clove, minced
- 1 T parmesan (optional)
- salt and pepper to taste
Instructions
1. Preheat the oven to 425°F. Spray a sheet pan with cooking oil or line with parchment paper.
2. In a medium bowl, toss the red potatoes with 2 tablespoons olive oil, 1 minced garlic clove, 2 tablespoons grated parmesan, and salt and pepper. Spread them on a third of the sheet pan. Roast for 10-15 minutes.
3. In the same bowl, combine 2 tablespoons olive oil, minced garlic, grated parmesan, breadcrumbs, cracked pepper, and sea salt. Coat the chicken breasts in the mixture.
4. Remove the pan from the oven and add the coated chicken pieces alongside the potatoes.
5. In a separate bowl, toss green beans with 1 tablespoon olive oil, 1 minced garlic clove, optional parmesan, and salt and pepper. Add to the remaining third of the sheet pan.
6. Return the pan to the oven and bake for 25 minutes, until the chicken reaches 165°F internally. For crispier potatoes, broil on high for 4-5 minutes at the end.
7. Remove from oven and let rest for a few minutes before serving. Enjoy!

Avoid overcrowding the sheet pan to ensure even roasting and crispy results—ingredients should have space to breathe.
Potatoes and green beans absorb flavor well, so season generously with salt and pepper.
Use parchment paper to prevent sticking and make cleanup easy, while helping preserve the crust on the chicken.
