A cozy, one-pot twist on classic lasagna featuring hearty ground beef, tender noodles, and a cheesy finish—all made in a single pot for easy cleanup.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, finely diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 24 ounces marinara sauce
- 3 cups low sodium chicken broth
- 8 ounces lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1/2 cup Parmesan cheese
- 2 tablespoons fresh parsley
Instructions
1. Brown the ground beef with olive oil and onion in a large pot over medium heat until the beef is fully cooked.
2. Stir in the garlic, tomato paste, salt, pepper, oregano, basil, and red pepper flakes. Cook for 1-2 minutes to bloom the flavors.
3. Add the marinara sauce and chicken broth, then bring the mixture to a gentle boil.
4. Nestle the broken lasagna noodles into the sauce and reduce heat to a simmer. Cook, stirring occasionally, until the noodles are tender, about 15-20 minutes.
5. Stir in the ricotta cheese and half of the mozzarella and Parmesan cheeses until melted and creamy.
6. Top with the remaining mozzarella and Parmesan cheeses. Let rest for 5 minutes before serving.
7. Garnish with fresh parsley and serve warm.
Notes
For extra richness, use Italian sausage in place of ground beef.
Make it vegetarian by using lentils or plant-based crumbles and vegetable broth.
Add chopped spinach or mushrooms for extra veggies and flavor.
