Ingredients
1 pound ground beef (90/10 lean)
1 cup orzo pasta (whole wheat or gluten-free)
1 cup shredded cheddar cheese
2 cups beef broth (low-sodium)
½ cup ketchup
¼ cup mustard (yellow or Dijon)
1 teaspoon Worcestershire sauce (non-alcoholic)
Salt and pepper to taste
Instructions
Heat a large skillet over medium-high heat. Brown the ground beef, breaking it into small pieces, until cooked through. Add the orzo, beef broth, ketchup, mustard, Worcestershire sauce, salt, and pepper. Stir to combine. Simmer uncovered for 8-10 minutes, until the orzo is tender and the liquid is absorbed. Off the heat, stir in the shredded cheddar until melted. Serve warm.
Notes
For best melting, use freshly grated cheddar instead of pre-shredded. Can be made ahead and refrigerated for up to 3 days. For added veggies, stir in ½ cup frozen peas and carrots during simmering.
