Ingredients
- 1 lb lean ground beef
- 3 medium Yukon Gold potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prep ingredients by chopping the onion and mincing the garlic.
2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant (about 3-4 minutes).
3. Increase heat to medium-high and add ground beef, cooking until browned (5-7 minutes).
4. Stir in diced potatoes and beef broth along with paprika, thyme, salt, and pepper.
5. Reduce heat to medium-low, cover skillet, and let simmer until potatoes are tender (15-20 minutes).
6. Adjust seasoning if needed, serve hot, garnished with fresh herbs.
Notes
Yukon Gold potatoes work best for their creamy texture, but russet or red potatoes can also be used.
For extra depth of flavor, add a splash of Worcestershire sauce or a pinch of crushed red pepper.
Leftovers reheat well and make a great lunch the next day.
