Creamy, fruity, and refreshingly easy to make, these No Bake Strawberry Cheesecake Bars combine a buttery graham cracker crust with a rich strawberry-infused filling—perfect for a cool summer dessert or sweet treat any time.
Ingredients
- Crust:
- 2 cups graham cracker crumbs
- 1 tablespoon sugar
- ½ cup butter, melted
- Filling:
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- ½ cup strawberry puree
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
1. In a small mixing bowl, mix together graham cracker crumbs, sugar, and butter until evenly coated. Press into an 8×8 square baking dish. Refrigerate for at least 30 minutes.
2. In a large mixing bowl, beat cream cheese, sugar, strawberry puree, and vanilla extract until smooth. Set aside.
3. In a separate bowl beat heavy whipping cream until stiff peaks form. Fold into cream cheese mixture.
4. Spread over top of the graham cracker crumbs and refrigerate for at least 3 hours.
Notes
Make sure the cream cheese is fully softened before mixing to avoid lumps.
Use fresh or thawed frozen strawberries to make the puree.
For a decorative touch, top with sliced strawberries before serving.
Store in the refrigerator for up to 3 days.
