Description

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of ½ lemon

Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add diced onion and garlic, sautéing until fragrant and softened.

3. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.

4. Stir in zucchini, bell pepper, and cherry tomatoes. Cook for 5-7 minutes until vegetables soften.

5. Add Kalamata olives, oregano, cumin, paprika, salt, and black pepper. Stir well and cook for another 2-3 minutes.

6. Remove from heat and mix in crumbled feta cheese and fresh parsley.

7. Squeeze fresh lemon juice over the stir fry before serving.
