Description

McGriddles Bites are a deliciously convenient twist on the classic McGriddles breakfast sandwich, combining fluffy pancake bits with savory breakfast sausage and a hint of maple syrup in a mini muffin form. Perfect for quick breakfasts or brunch gatherings, these bite-sized treats offer a harmonious blend of sweet and savory flavors that are easy to make and sure to please the whole family.

  • 2 cups pancake mix (the kind that only needs water)
  • ¼ cup maple syrup
  • 1 cup shredded cheddar cheese
  • Wet Ingredients:
  • 1 ½ cups water
  • Protein:
  • 1 lb breakfast sausage

Instructions

1. Brown the breakfast sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Cook until fully done, then strain to remove excess grease and set aside.

2. In a large mixing bowl, combine pancake mix, water, shredded cheddar cheese, and maple syrup. Mix well until combined.

3. Gently fold the cooked sausage into the batter, making sure it’s evenly distributed.

4. Preheat oven to 400°F (204°C).

5. Spoon the batter evenly into a nonstick mini muffin tin, filling each well nearly to the top.

6. Bake for 12–15 minutes, until golden brown and cooked through. A toothpick should come out clean.

7. Allow to cool slightly, then remove from the pan.

8. Serve warm with extra maple syrup for dipping if desired.


Notes

You can use any pancake mix brand that requires only water for convenience and consistent results.

For a spicier version, add a pinch of cayenne pepper or use spicy sausage.

Cheddar cheese adds flavor, but feel free to experiment with Monterey Jack or pepper jack.

Mini muffin tins are ideal; if using a standard tin, bake slightly longer.

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the microwave or oven before serving.
