Description

Juicy Crockpot Chicken is the ultimate set-it-and-forget-it meal—tender chicken breasts simmered in savory broth with vegetables and seasonings for an easy, flavorful dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 2 cups mixed vegetables (carrots, bell peppers, and green beans)
  • Fresh parsley, for garnish (optional)

Instructions

1. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.

2. In a skillet, heat olive oil over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown. (Optional step.)

3. Place the seasoned chicken in the crockpot.

4. Pour the chicken broth and soy sauce over the chicken.

5. Layer the mixed vegetables on top of the chicken.

6. Cover the crockpot and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.

7. Ensure the internal temperature of the chicken reaches 165°F (75°C).

8. For a different texture, shred the chicken with two forks before serving. (Optional.)

9. Sprinkle fresh parsley on top for added flavor and visual appeal.

10. Serve and enjoy your juicy chicken with your favorite side dishes.

Notes

For a low-carb option, skip the soy sauce or use coconut aminos. Store leftovers in an airtight container in the fridge for up to 3 days. This recipe also works great for meal prep.
