Ingredients
- 1 lb boneless chicken thighs
- 1 cup mixed bell peppers
- 1 medium red onion
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 3 tablespoons low-sodium soy sauce
Instructions
1. In a bowl, whisk together olive oil, lemon juice, minced garlic, and soy sauce to create the marinade.
2. Cut chicken thighs into bite-sized pieces and toss them in the marinade. Let marinate for at least 1 hour.
3. Thread marinated chicken onto skewers, alternating with bell peppers and red onion.
4. Preheat grill to medium-high heat (400°F).
5. Grill skewers for 12-15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
6. Serve immediately, optionally drizzling with extra marinade.
Notes
For deeper flavor, marinate the chicken overnight.
