Description

Honey Lime Cucumber Salad is a refreshing, sweet and tangy side dish made with crisp cucumbers, fresh lime juice, and natural honey. Perfect for summer gatherings, barbecues, or a light healthy snack.


Ingredients

  • 1/4 cup honey
  • 2 tablespoons fresh lime juice

  • 1/2 cup cherry tomatoes, halved (optional)

Instructions

1. Wash the cucumbers thoroughly under cool running water and pat dry.

2. Slice the cucumbers into thin rounds or half-moons and place them in a large mixing bowl.

3. In a small bowl, whisk together the honey, fresh lime juice, salt, and black pepper until fully combined.

4. Taste the dressing and adjust sweetness or tanginess if needed.

5. Pour the honey lime dressing over the sliced cucumbers.

6. Add mint, cherry tomatoes, red onion, feta cheese, or avocado if using.

7. Gently toss everything together until evenly coated.

8. Let the salad rest for 10 minutes to allow the flavors to meld.

Notes

Use fresh lime juice for the brightest flavor.

English or Persian cucumbers work especially well because they are less bitter.

For extra crunch, leave the cucumber skin on.
