Description
Experience a fiesta of flavors with grilled honey lime chicken layered over jasmine rice and a fresh avocado mix. It’s a deliciously colorful meal that delights every bite!
Ingredients
- 2 boneless, skinless chicken breasts
- 1⁄4 cup honey
- Juice of 2 limes
- Zest of 1 lime
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 avocado, diced
- 1⁄4 cup red onion, finely chopped
- 1⁄4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Lime wedges, for serving
Instructions
1. In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper to create a marinade.
2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours.
3. While the chicken marinates, rinse the jasmine rice under cold water until the water runs clear.
4. In a medium saucepan, bring the chicken broth to a boil. Add the rice, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
5. Preheat a grill or stovetop grill pan over medium-high heat.
6. Remove the chicken from the marinade, allowing excess to drip off before placing it onto the grill.
7. Grill the chicken for about 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
8. Remove from heat and allow to rest for a few minutes before slicing.
9. In a bowl, combine diced avocado, red onion, fresh cilantro, and olive oil. Lightly mix so everything is evenly distributed.
10. To assemble the stack, layer a serving of rice at the base. Top with sliced chicken and then the avocado mixture.
11. Serve with lime wedges and additional cilantro for garnish, if desired.

The honey lime marinade offers a sweet, tangy flavor that pairs wonderfully with the creamy avocado and fragrant rice.
Make sure to rest the grilled chicken for a few minutes to retain its juices.
If jasmine rice is unavailable, substitute with basmati or your favorite rice.
Extra marinade can be heated and drizzled over the stack for added flavor.
