Ingredients
Roasted Sweet Potatoes:
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- Salt and black pepper to taste
Honey Garlic Beef:
- 1 lb lean ground beef
- 4 cloves garlic, minced
- 0.33 cup honey
- 0.25 cup soy sauce (or tamari/coconut aminos)
Toppings:
- 1 large avocado, sliced
- 0.25 cup feta cheese, crumbled
Instructions
1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
2. Spread potatoes on a baking sheet and roast for 25–30 minutes until tender and caramelized.
3. In a skillet over medium heat, sauté minced garlic in a little oil until fragrant.
4. Add ground beef and cook until browned. Drain excess fat.
5. Whisk together honey and soy sauce. Pour over the beef and simmer for 3–5 minutes until the sauce thickens and glazes the meat.
6. Assemble bowls with a portion of beef and roasted potatoes.
7. Top with sliced avocado and crumbled feta cheese.
8. Serve immediately or store components separately for meal prep.
Notes
For a spicy kick, add red pepper flakes to the honey garlic sauce.
This recipe is naturally gluten-free if you use tamari instead of soy sauce.

You can swap feta for goat cheese or leave it out for a dairy-free version.
