Description

Hobo Casserole Ground Beef is a heartwarming dish that’s perfect for busy families or casual gatherings. This comforting casserole features layers of savory ground beef, tender potatoes, and gooey melted cheese—all baked to perfection in one.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. In a skillet, heat over medium heat. Add ground beef and cook until browned. Drain excess fat.

3. Stir in chopped onion and minced garlic; sauté until the onion is soft.

4. Layer cooked beef in the baking dish, followed by thinly sliced potatoes. Season with salt, pepper, Italian seasoning, and paprika.

5. Top with cheddar and Parmesan cheese. Pour beef broth around the edges for moisture.

6. Cover with foil and bake for 30 minutes; then remove foil and bake an additional 15–20 minutes until potatoes are tender.


Notes

You can add a touch of milk for extra creaminess, or swap out the cheeses for your favorites.

To make it ahead, assemble the casserole and refrigerate for up to 24 hours before baking.

Add frozen mixed vegetables between the layers for extra nutrition and texture.

Garnish with fresh parsley just before serving for a pop of color.
