Description

Sweet chili ground beef and Brussels sprouts has the perfect balance of sweet and savory flavors and comes together in just 30 minutes for a quick, protein-packed dinner.


Ingredients

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon avocado oil
  • 1 pound shredded brussels sprouts
  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

1. Add the ground beef to a large skillet and crumble it as it cooks.

2. Add in the green onions and season with garlic powder, salt, pepper, sriracha (if using), and soy sauce. Cook until the beef is fully browned. Remove from the skillet and set aside.

3. Add avocado oil to the skillet and toss in the shredded brussels sprouts. Season with salt and pepper. Sauté until soft and caramelized, about 6-8 minutes.

4. Return the cooked ground beef to the skillet with the brussels sprouts. Add sweet chili sauce and lime juice.

5. Stir everything together until evenly coated and heated through.

6. Top with sesame seeds and serve as is or over rice, quinoa, or lettuce wraps.


Notes

To keep it low-carb, serve this over cauliflower rice or in lettuce cups.

For extra heat, increase the amount of sriracha or add red pepper flakes.

Use pre-shredded Brussels sprouts for quicker prep.

This dish stores well in the fridge for up to 3 days and reheats easily.
