Description

A bright and flavorful Greek-style chicken dish featuring a zesty lemon-garlic marinade and baked feta for an easy, satisfying meal.


Ingredients

  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • Fresh parsley, chopped for garnish

Instructions

1. Preheat oven to 400°F (200°C).

2. In a bowl, whisk together lemon juice, garlic, olive oil, oregano, salt, and pepper.

3. Add chicken breasts and coat well. Marinate for at least 30 minutes or 10–15 minutes if short on time.

4. Arrange chicken in a baking dish and pour remaining marinade over the top.

5. Bake for 25–30 minutes until chicken reaches 165°F (74°C).

6. Remove from oven and sprinkle feta evenly over the chicken.

7. Broil for 3–5 minutes until feta is lightly golden.

8. Garnish with fresh parsley and serve immediately.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a 350°F oven for 10–15 minutes or microwave in short intervals.

For meal prep, slice chicken and store with grains or salad.
