Description

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 4 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika
  • 1⁄2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley leaves (optional for garnish)

Instructions

1. In a large bowl, combine olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and black pepper. Stir until well mixed.

2. Add the chicken breasts and baby potatoes to the bowl. Toss them gently to ensure they are evenly coated with the seasoning mixture.

3. Place the seasoned chicken and potatoes into the slow cooker, arranging them in an even layer.

4. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the chicken is cooked through and the potatoes are tender.

5. About 30 minutes before serving, sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.

6. Cover and let the Parmesan melt and infuse into the dish during the remaining cooking time.

7. Once cooked, remove from the slow cooker and transfer to a serving platter.
