This easy Frito Corn Salad is a creamy, colorful side dish packed with sweet corn, black beans, cheddar cheese, and crunchy Fritos—perfect for summer cookouts and backyard barbecues.
Ingredients
- 2 (15-ounce) cans sweet corn, drained
- 1 (15-ounce) can black beans, drained
- 1 (10-ounce) can Rotel, drained
- 1 bell pepper, diced (red, green, or yellow)
- 1 cup shredded cheddar cheese
- 1 (9.25-ounce) bag Fritos
- 2/3 cup sour cream
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
Instructions
1. In a small bowl, combine the sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and ground cumin.
2. Whisk until smooth and fully incorporated.
3. In a large bowl, combine the drained corn, black beans, Rotel, diced bell pepper, and shredded cheddar cheese.
4. Pour the homemade dressing over the salad mixture.
5. Gently stir until everything is evenly coated.
6. Just before serving, add the Fritos and carefully fold them into the salad to avoid breaking them.
7. Serve immediately to maintain the Fritos’ crunchy texture.
Notes
Store: This salad is best enjoyed fresh. If fully mixed, the Fritos will become soggy. Without the Fritos added, the salad and dressing will keep in an airtight container in the refrigerator for up to 2 days.
Make Ahead: Prepare the salad and dressing separately and combine with the Fritos just before serving. You may also mix the salad and dressing ahead of time, adding the Fritos right before serving for maximum crunch.
