Description

Pineapple Chicken and Rice is a delightful dish that combines the sweetness of juicy pineapple with savory chicken and fluffy jasmine rice for a colorful and satisfying meal.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown and fully cooked, then remove and set aside.

2. In the same skillet sauté the onion, garlic, and red bell pepper until softened.

3. Add the cubed pineapple and cook for about 2 minutes.

4. Stir in the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.

5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18–20 minutes until the rice is tender and cooked through.

6. Return the cooked chicken to the skillet and mix well to combine all flavors. Heat through.

7. Serve hot garnished with sliced green onions and sesame seeds.


Notes

Use fresh pineapple for the best flavor, but canned pineapple (drained) works well too.

For extra vegetables add peas, carrots, or snap peas.

This dish pairs nicely with a simple cucumber salad or steamed broccoli.

Leftovers store well in the refrigerator for up to 3 days.
