Description

Juicy oven-baked chicken breasts seasoned with warm spices and topped with a fresh, vibrant mango salsa made with lime, cilantro, and crisp vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.52 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon cracked black pepper
  • 1/2 teaspoon dried oregano
  • 2 ripe mangoes, diced (about 3 cups)
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1/2 cup finely chopped red onion
  • 1/4 cup freshly chopped cilantro
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • 1/4 teaspoon sea salt (for salsa)

Instructions

1. Preheat the oven to 425°F (218°C).

2. Place chicken breasts in a baking dish or on a rimmed baking sheet and pound them gently to about 1 inch thickness for even cooking.

3. Brush both sides of the chicken with olive oil.

4. In a small bowl mix sea salt, garlic powder, chili powder, cumin, smoked paprika, black pepper, and oregano.

5. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts.

6. Bake the chicken for 17–22 minutes or until the internal temperature reaches 165°F (74°C).

7. Optional: Broil the chicken for the last 2 minutes for a lightly crisp exterior.

8. Remove chicken from the oven and let it rest for 5 minutes.

9. While the chicken bakes, combine diced mango, red bell pepper, jalapeño, red onion, cilantro, lime juice, lime zest, and salt in a bowl.

10. Gently toss the salsa ingredients until well combined and adjust seasoning if needed.

11. Place the baked chicken on serving plates and spoon the mango salsa generously over the top before serving.


Notes

Use ripe but firm mangoes so the salsa holds its texture.

Adjust jalapeño based on your preferred spice level.

Serve with rice, quinoa, or a fresh green salad for a complete meal.

Leftover salsa can be stored in the refrigerator for up to 2 days.
