Ingredients
- 1 box (15.25 oz) strawberry cake mix
- 6 tablespoons unsalted butter, melted
- 2 large eggs
- 2 tablespoons lemon juice
- 1/2 cup powdered sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper
2. In a bowl, mix cake mix, melted butter, eggs, and lemon juice until a thick dough forms
3. Scoop dough into 1.5–2 tablespoon-sized balls and roll each in powdered sugar until fully coated
4. Place dough balls 2 inches apart on the prepared baking sheet
5. Bake for 11 minutes until edges are set and crinkles form, keeping centers soft
6. Allow cookies to cool completely on the baking sheet before serving
Notes
Do not overbake to keep cookies soft and chewy.
Lemon juice enhances the strawberry flavor without making the cookies taste lemony.
