Ingredients
1.5 lbs (680g) boneless, skinless chicken breasts, cut into chunks
1 cup long-grain white rice
1 1/2 cups low-sodium chicken broth
3/4 cup plain yogurt (or vegan yogurt)
1/2 cup grated cucumber (about 1 small cucumber)
1/4 cup finely chopped fresh dill
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 green onion, thinly sliced (for garnish)
Instructions
Preheat oven to 375°F (190°C)
In an 8×8-inch baking dish, layer rice evenly
Pour chicken broth over the rice
Add chicken chunks on top, spacing evenly
In a bowl, mix yogurt, grated cucumber, minced garlic, oregano, salt, and pepper
Spread tzatziki mixture over chicken
Drizzle with olive oil
Bake for 40-45 minutes until rice is tender and top is golden
Garnish with green onion before serving
