  • 1.5 pounds chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

1. Cut chicken into bite-sized chunks and season with salt, pepper, and Italian seasoning.

2. Place chicken in the crockpot. Add garlic, sun-dried tomatoes, and pour in chicken broth.

3. Cover and cook on low for 4-5 hours or high for 2.5-3 hours.

4. About 30 minutes before serving, add orzo and cubed cream cheese. Stir well to combine.

5. Cook until orzo is tender and cheese is melted, about 25-30 minutes.

6. Stir in fresh spinach and Parmesan cheese until spinach wilts and cheese melts.

7. Taste and adjust seasoning. Serve hot straight from the crockpot.


Notes

Let the cream cheese sit at room temperature before adding so it melts smoothly.

If orzo absorbs too much liquid, stir in a splash of broth or milk when reheating.

Add spinach last to keep its vibrant color and texture intact.
