Ingredients
- 2 lbs (900 g) beef chuck
- 4 large potatoes
- 2 cups (480 ml) beef broth
- 1 medium onion
- 3 cloves garlic
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp black pepper
- 1 tsp salt
- 1 cup (240 ml) juice
- 1 tbsp olive oil
Instructions
1. Prep beef chuck by cutting it into uniform bite-sized pieces.
2. Pat the beef dry with paper towels for a better sear.
3. Heat 1 tbsp of olive oil in a large skillet over medium heat.
4. Sear the beef in batches until all sides are browned.
5. Transfer the seared beef to the crockpot and set aside.
6. Sauté chopped onion and minced garlic in the skillet for 3-4 minutes.
7. Stir in 2 tbsp of tomato paste and cook for 1 minute.
8. Pour in 1 cup of juice, scraping the pan to release bits.
9. Simmer the mixture for a couple of minutes, then pour over beef.
10. Layer seared beef at the bottom of the crockpot.
11. Add diced potatoes on top and sprinkle with thyme, pepper, and salt.
12. Pour beef broth over the mixture, ensuring potatoes are submerged.

Sear the beef bites until browned for a rich, caramelized crust before adding to the crockpot.
