Ingredients
- 1/4 cup chia seeds
- 2 tablespoons unsweetened cocoa powder
- 1 cup unsweetened almond milk (or milk of choice)
- 2 tablespoons pure maple syrup (or preferred sweetener)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
1. In a mixing bowl, whisk together the chia seeds and cocoa powder until well combined.
2. Pour in the almond milk, maple syrup, vanilla extract, and a pinch of salt. Whisk thoroughly until the mixture is smooth and free of lumps.
3. Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
4. Before serving, stir the pudding well to break up any clumps.
5. Serve chilled and top with fruit, nuts, yogurt, or chocolate chips if desired.
Notes
You can substitute almond milk with any milk of your choice, including coconut milk for a creamier texture.
Adjust the sweetness by adding more or less maple syrup depending on your preference.
