Ingredients
- For the Chicken:
- 2 boneless, skinless chicken breasts, cooked and diced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- For the Orzo:
- 8 ounces orzo pasta
- For the Vegetables:
- 2 celery stalks, finely diced
- 2 carrots, finely diced
- ½ yellow onion, finely diced
- For the Sauce:
- 5 tablespoons butter
- 2 tablespoons olive oil
- 2 cups chicken broth
- ½ cup heavy whipping cream
- 1 teaspoon chicken bouillon powder
- ⅓ cup all-purpose flour
Instructions
1. Prepare the orzo according to the package directions. Drain and set aside.
2. Sprinkle chicken breasts with onion powder, garlic powder, paprika, salt, and pepper. Cook until internal temperature reaches 165°F, then dice into bite-sized pieces.
3. Melt butter with olive oil in a skillet over medium heat. Add diced onion, carrots, and celery. Sauté until slightly softened.
4. Sprinkle flour over the vegetables and whisk to form a paste. Cook for 2–3 minutes to eliminate raw flour taste.
5. Gradually whisk in chicken broth and heavy cream until smooth. Simmer until thickened.
6. Add the cooked chicken, chicken bouillon powder, and prepared orzo to the skillet. Stir well and simmer for a few more minutes until everything is heated through.
7. Spoon into bowls and serve hot.
Notes
Use rotisserie chicken or leftover cooked chicken for quicker prep.
Add peas or frozen mixed vegetables for more classic pot pie flavor.
Adjust the sauce thickness by adding more broth or cream to your preference.
Garnish with fresh parsley or thyme for added freshness.
