Description

Tender chicken, fresh vegetables, and chewy udon noodles tossed in a sweet and savory homemade teriyaki sauce for a quick, satisfying meal.


Ingredients

  • 1 lb chicken thighs, cut into bite-sized pieces
  • 12 oz udon noodles
  • 2 cups broccoli florets
  • 1 medium onion, thinly sliced
  • 2 medium carrots, julienned
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, finely sliced or grated
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon honey (optional)
  • 2 tablespoons vegetable oil

Instructions

1. In a medium bowl, mix soy sauce, brown sugar, and honey to make the teriyaki marinade. Add chicken pieces and coat well. Let marinate for at least 10 minutes.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook for 5–7 minutes until golden and cooked through. Remove chicken and set aside.

3. Boil water in a large pot and cook udon noodles according to package instructions. Drain and rinse under cold water. Set aside.

4. In the same skillet, add the remaining tablespoon of oil. Add garlic and ginger, stir-fry for 30 seconds. Add onion, carrots, and broccoli. Stir-fry for 5–7 minutes until tender-crisp.

5. Return cooked chicken to the skillet with the vegetables. Add reserved marinade and stir to combine.

6. Add cooked udon noodles and toss everything together until evenly coated in sauce. Cook for another 2–3 minutes until heated through.

7. Serve hot, garnished with sesame seeds or green onions if desired.


Notes

If you prefer a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon water and simmer with the sauce to thicken.

Try other proteins like shrimp, beef, or tofu. Press tofu before cooking for best texture.

Use low-sodium soy sauce if you’re watching salt intake. Add extra honey or water to adjust sweetness and saltiness.
