Cheesy Mushroom Ravioli Casserole with Spinach

Description

This cheesy mushroom ravioli casserole with spinach is a comforting, family-friendly dinner that’s easy to make and packed with flavor. Creamy, cheesy, and layered with sautéed mushrooms and spinach, it’s the perfect baked pasta dish for busy weeknights.


Ingredients

  • 1 bag (25 oz) of fresh ravioli (use your favorite – we used 4-cheese)
  • 1 1/2 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 cup whipping cream
  • 1/2 cup vegetable broth
  • 1/2 lb (225g) mushrooms, sliced
  • 2 cups fresh spinach
  • 1 1/2 cup shredded parmesan cheese
  • 1 teaspoon fresh cracked black pepper
  • 1/2 teaspoon red chili pepper flakes
  • 1 tablespoon fresh chopped parsley, for garnish

Instructions

1. Preheat your oven to 400ºF (200ºC) and grease a 9×13-inch baking dish.

2. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.

3. Add minced garlic and sauté for about 1 minute until fragrant.

4. Add the cream, 2 tablespoons of parmesan, and vegetable broth.

5. Bring to a gentle simmer, then reduce heat to low and simmer for 10 minutes until the sauce thickens. Season with black pepper.

6. In the meantime, sauté the spinach in 1/2 tablespoon olive oil until wilted. Set aside.

7. Wipe the pan dry and heat another 1/2 tablespoon of olive oil.

8. Sauté the mushrooms for 4–5 minutes until the edges are golden.

9. Pour a little of the cream sauce into the bottom of the prepared baking dish.

10. Layer half of the ravioli on top in a single layer.

11. Top with half of the sautéed spinach, mushrooms, cream sauce, and parmesan. Sprinkle with cracked pepper to taste.

12. Repeat the layers with the remaining ravioli, spinach, mushrooms, cream sauce, and parmesan.

13. Cover the baking dish with foil and bake for 20 minutes (30 minutes if using frozen ravioli).

14. Remove the foil and bake uncovered for 2 more minutes to crisp up the cheese and mushrooms.

15. Garnish with red chili pepper flakes and chopped parsley before serving.

16. Serve hot with garlic bread, salad, or roasted veggies.


Notes

You can use any kind of ravioli you prefer—cheese, mushroom, spinach, or meat-filled.

For extra richness, add shredded mozzarella between layers.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
