Description

Crispy on the outside and gooey on the inside, these Cheesy Mashed Potato Puff Bites are the ultimate comfort snack or party appetizer. Made with mashed potatoes, melty cheese, and green onions, they’re golden perfection whether baked or fried.

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions (chopped)
  • 1 large egg
  • Salt and pepper to taste
  • Oil for frying (or cooking spray for baking)

Instructions

1. Prepare the mashed potatoes by boiling and mashing them until smooth.

2. In a large bowl, combine the mashed potatoes, shredded cheese, chopped green onions, and egg. Mix until fully incorporated.

3. Season the mixture with salt and pepper to taste.

4. Scoop and roll the mixture into small balls or puff-sized portions.

5. Coat each puff evenly in breadcrumbs.

6. For frying: heat oil in a deep skillet or pan and fry each puff until golden brown and crispy. Remove and drain on paper towels.

7. For baking: preheat the oven to 400°F (200°C). Place puffs on a greased or parchment-lined baking sheet and lightly spray with cooking oil. Bake for 20 minutes or until golden and crispy.

8. Serve warm with your favorite dipping sauce.

Notes

Leftover mashed potatoes work great in this recipe and help reduce food waste.

Feel free to add crumbled bacon or finely chopped cooked veggies to the mixture for extra flavor.

Use panko breadcrumbs for an extra-crispy texture.

If baking, flip the puffs halfway through to ensure even browning.

Serve with sour cream, ketchup, ranch, or spicy aioli for dipping.
