Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
Instructions
1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
2. Season the chicken breasts with garlic powder, onion powder, black pepper, and salt. Place them in a single layer in the baking dish.
3. Evenly distribute the uncooked rice over the seasoned chicken.
4. In a bowl, mix the chicken broth, cheddar cheese, and sour cream until well combined. Pour over the rice and chicken.
5. Cover tightly with foil and bake for 40–45 minutes.
6. Remove foil and bake for an additional 10–15 minutes until bubbly and golden brown.
Notes
You can add steamed broccoli, peas, or diced bell peppers to the dish before baking for extra color and nutrition. Substitute brown rice for a whole grain version, but increase the baking time accordingly.
