Main Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced (Andouille or kielbasa)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced into rounds
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Optional Additions:

  • 1 cup baby potatoes or sweet potatoes, diced (for a heartier dish)
  • 1 ear of corn, cut into rounds (for a Southern twist)
  • Parmesan cheese for extra flavor before serving

Instructions

1. Preheat your oven to 400°F (200°C).

2. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

3. In a large bowl, add the shrimp, sausage, and all the chopped vegetables.

4. Drizzle with olive oil and sprinkle Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.

5. Toss everything together until well coated.

6. Spread the mixture evenly on the baking sheet, ensuring everything is in a single layer.

7. Bake for 15–20 minutes, flipping halfway through, until shrimp are pink and fully cooked and vegetables are tender.

8. Squeeze fresh lemon juice over the dish for a bright, zesty finish.

9. Garnish with fresh parsley and serve immediately.


Notes

Add diced baby potatoes or sweet potatoes to make it more filling, but roast them for 10 minutes first before adding shrimp and veggies to avoid undercooking.

Top with Parmesan cheese for a cheesy, savory twist.
