Ingredients
- 2 boneless, skinless chicken breasts, grilled and sliced
- 1 pound penne pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
1. Boil the penne pasta until al dente, drain, and set aside.
2. In a bowl, combine cherry tomatoes, red onion, garlic, and basil. Drizzle with balsamic vinegar and olive oil, season with salt and pepper, and toss to combine.
3. In a large skillet over medium heat, combine the cooked pasta and tomato mixture. Stir gently to heat through.
4. Add the grilled chicken slices to the skillet and mix to evenly distribute.
5. Serve the pasta into bowls and top each serving generously with grated Parmesan cheese.
Notes
You can use store-bought grilled chicken or leftover chicken to save time.
