Description
Juicy grilled chicken skewers coated in a creamy, sweet-and-spicy bang bang sauce. Perfect for quick weeknight dinners, BBQs, or a crowd-pleasing appetizer.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon smoked paprika (optional)
- 8–10 skewers (wooden or metal; soak wooden skewers in water if using)
- 1/2 cup mayonnaise (or 1/4 cup mayo + 1/4 cup Greek yogurt for a lighter option)
- 2 tablespoons sriracha
- 1 tablespoon honey or sugar
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon chopped green onions (optional garnish)
- 1 teaspoon sesame seeds (optional garnish)
Instructions
1. Cut the chicken into 1 to 1.5-inch chunks, pat dry, and season with salt, black pepper, garlic powder, and smoked paprika. Toss with olive oil until evenly coated.
2. In a small bowl, mix mayonnaise, sriracha, honey, and rice vinegar until smooth. Adjust sweetness or heat to taste.
3. Thread the seasoned chicken pieces onto skewers, leaving a little space between each piece for even cooking.
4. Preheat a grill to medium-high heat. Grill the skewers for about 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
5. Brush the chicken with bang bang sauce during the last few minutes of grilling, or drizzle the sauce over the skewers after removing them from the grill.
6. Garnish with chopped green onions and sesame seeds if desired, and serve immediately with extra sauce on the side.
Notes
If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
Chicken thighs tend to stay juicier than chicken breasts when grilled.
You can cook the skewers on a grill pan or in an oven at 425°F if an outdoor grill is not available.
Serve with rice, grilled vegetables, or a fresh salad for a complete meal.
