Ingredients
- Chicken + Chili Lime Marinade:
- 2 lbs chicken breasts, trimmed
- 1/4 cup extra virgin olive oil
- 1/4 cup lime juice
- 1 tbsp dried basil
- 1 tsp ground coriander
- 1 tsp salt
- 3/4 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes
- Chunky Avocado Topping:
- 4 avocados, diced
- 2 tbsp fresh cilantro, chopped
- 3 tsp lime juice
- 1/2 tsp salt
- 1/2 tsp garlic powder
Instructions
1. Slice the chicken breasts horizontally to create 8 thin cutlets for even cooking.
2. Place the chicken in a large bag or bowl with all marinade ingredients. Mix well and refrigerate for at least 1 hour, up to 12 hours.
3. Preheat grill to medium heat or heat a skillet over medium-high heat with oil.
4. Remove chicken from marinade and cook for about 9–10 minutes total on the grill, flipping once, until internal temperature reaches 165°F. Alternatively, cook in a skillet for about 10–14 minutes, flipping as needed until fully cooked.
5. While the chicken cooks, combine diced avocado, cilantro, lime juice, salt, and garlic powder in a bowl. Mix gently.
6. Transfer cooked chicken to plates and top with the avocado mixture.
7. Serve immediately while warm.
Notes
For best flavor, marinate the chicken overnight.
Prepare the avocado topping just before serving to prevent browning.
Add cayenne pepper to the marinade for extra heat if desired.
Store leftover chicken (without topping) in the refrigerator for up to 3 days.
Serve with cauliflower rice, quinoa, or a fresh salad for a complete meal.
