Description

Ingredients

  • 4 cups mixed greens (spinach, arugula, or spring mix)
  • 2 medium crisp apples (Honeycrisp or Granny Smith)
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey (for dressing)
  • 1 tablespoon Dijon mustard (for dressing)
  • 1/4 cup olive oil (for dressing)
  • 2 tablespoons apple cider vinegar (for dressing)

Instructions

1. Wash and core the apples, then slice them thinly.

2. Chop the mixed greens and place them in a large salad bowl.

3. In a small bowl, combine honey, Dijon mustard, olive oil, and apple cider vinegar to make the dressing.

4. Add the sliced apples, walnuts, dried cranberries, and feta cheese to the bowl of mixed greens.

5. Drizzle the dressing over the salad and toss gently before serving.


Notes
