Description
A crisp and colorful fall salad featuring sweet Honeycrisp apples, creamy feta, crunchy walnuts, and dried cranberries tossed with a light honey apple cider vinaigrette.
Ingredients
- 2 Honeycrisp apples, thinly sliced
- 4 cups mixed greens (arugula and butter lettuce)
- 1 cup feta cheese, crumbled
- 1/2 cup chopped walnuts (or toasted pecans)
- 1/2 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt, to taste
- Black pepper, to taste
Instructions
1. In a small mixing bowl, whisk together olive oil, apple cider vinegar, and honey until smooth. Season with salt and pepper to taste.
2. Place the mixed greens in a large serving bowl to form the base of the salad.
3. Thinly slice the Honeycrisp apples and arrange them evenly over the greens.
4. Sprinkle the crumbled feta cheese, chopped walnuts, and dried cranberries over the top.
5. Drizzle the prepared dressing over the salad.
6. Gently toss with salad tongs until lightly coated and serve immediately.
Notes
For the best flavor and texture, add the dressing just before serving.
If preparing ahead, store the dressing and salad components separately.
Toasted pecans can be used instead of walnuts for a slightly sweeter, nuttier flavor.
