Ingredients

- 3 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) chopped tomatoes
- 6 cups low-sodium chicken broth
- 2 tsp Italian seasoning
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
1. Dice chicken into bite-sized pieces and chop the garlic, carrots, celery, and tomatoes.
2. In a large pot over medium heat, drizzle olive oil and sauté garlic, carrots, and celery until softened (about 5 minutes).
3. Add chicken and cook until golden brown.
